Getting Started: Your Home Winery Equipment Guide


Whether you are starting with a 6-gallon kit (like VineCo, WineXpert, or RJS) or scaling up to a home estate production, the fundamentals of winemaking remain the same. This guide helps you choose the right gear based on your goals.


1. Wine Kit Setup


Most entry-level winemakers start with 5-6 gallon batches. This is the standard size for premium kits like Orchard Breezin’

The Essentials:


  • Primary Fermenter: A 7.9-gallon food-grade plastic bucket with a lidThis provides "headspace" for the carbon dioxide and foam produced during active fermentation.

  • Secondary Fermenter (Carboy): A 6-gallon glass or PET carboy. Unlike the bucket, this must be filled to the neck during aging to eliminate oxygen contact.

  • Sanitization: Star San or IO-StarEverything that touches your wine must be sanitized to prevent spoilage.

  • Racking Gear: A siphon setup (Auto-Siphon) and 5/16" or 3/8" food-grade tubing to transfer wine between vessels.

  • Testing Tools: A Hydrometer and a test jar to measure sugar levels (°Brix) and track your fermentation's progress.

  • Bottling: A hand corker, a bottle filler (wand), and enough 750ml bottles (approx. 30 per 6-gal batch).


2. Home Vintner Harvest Equipment


If you are moving beyond kits to fresh grapes or larger volumes, your equipment needs shift toward efficiency and heavy-duty processing.


Crush & Fermentation:


  • Destemmer/Crusher: Essential for fresh fruit to remove stems and split berries without crushing seeds.

  • Large Fermenters: 32-gallon FDA plastic fermenters are common for managing the "cap" during red wine fermentation.

  • Wine Press: You'll need a ratcheting basket press or a bladder press to separate the wine from the skins (pommace).

  • Variable Volume Tanks: These stainless steel "always-full" tanks feature a floating lid with an inflatable gasket. They allow you to seal the wine at any level, eliminating oxygen-rich headspace regardless of how many gallons your harvest yielded.


Testing & Precision:


  • SO2 & pH Testing: For large volumes, a Vinmetrica SC-300 is the standard for accurately measuring sulfite levels and acidity.

  • Chromatography Kit: Used to confirm that Malolactic Fermentation (MLF) is 100% complete before bottling.


Bottling & Finishing:

  • Vacuum Fillers (Enolmatic & Enolmaster): Professional-grade options that use vacuum pressure to fill bottles quickly and consistently without exposure to oxygen. 
  • Gravity Fillers (Marchisio 3 and 5 Spout): Robust stainless gravity-fed options for use with positive pressure pumps. 

Red vs. White: Key Gear Differences


  • Red Wine: Requires tools for "Punching the Cap" (re-submerging skins) and often uses Enological Tannins or oak for structure.

  • White Wine: Requires a way to keep fermentation cooler (55°–65°F) and tools for Lees Management (stirring sediment) to add mouthfeel.
